1 head of cauliflower (grated with food processor or box grater)
1 jalapeno, seeded and chopped
1T fresh ginger, grated
1/2 c + 2 T unsweetened coconut milk
1/2 tsp cumin
In a large skillet heat the coconut milk and add jalapeno. Saute for a minute then add grated ginger. Add grated cauliflower and stir to allow cauliflower to soften. Turn up heat to high and stir constantly. The rice is done when it has cooked down, is softened and a little bit crisp on the outside.
