1 medium head green cabbage, cut into 1-inch-thick rounds
1 Tbl olive oil for coating pan
2 Tbl olive oil for coating cabbage
1 Tbl lemon juice
Coarse salt and ground pepper
1 teaspoon caraway or fennel seeds
Lowfat/low carb blue cheese dressing
Preheat oven to 450F. Cover pan with tin foil and coat with 1 Tbl olive oil.
Whisk together the 2 Tbl olive oil and lemon juice. Cut the head of cabbage into 1” thick rounds and arrange in a single layer on the pan. Brush the top sides of each cabbage wedge with the mixture and seasoning. Turn cabbage wedges and brush the other side with the mixture and seasoning.
Roast cabbage for about 15 minutes, or until the side touching the pan is nicely browned. Then carefully turn each wedge and roast 10-15 minutes more, until the cabbage is nicely browned.
